Smoked Mackerel and Celeriac Remoulade
A twist on the classic dish of raw celeriac which turned out rather well.
Shredded smoked mackerel was combined with matchstick thin slices of celeriac, a little mayonnaise, lemon juice, horseradish and parsley. You don’t want to overdo the sauce, and for two people, a heaped teaspoon of horseradish to a big tablespoon of mayonnaise is about right.
We made a quick pickle of radishes by slicing, salting and soaking in vinegar, and served this alongside.
